- 1 cup oat flour (or blend rolled oats into powder)
- 1 ripe banana, mashed
- 1 Chokopam bar, grated or melted (about 3 tablespoons when melted)
- 2 tbsp cacao powder (optional, for extra richness)
- 1 cup almond milk (or any plant-based milk)
- 1 tbsp maple syrup or coconut sugar
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of sea salt
- Coconut oil or vegan butter for cooking

Melt the Chokopam bar gently over a double boiler or in the microwave for 15 seconds at a time, stirring until smooth.

In a mixing bowl, combine mashed banana, almond milk, maple syrup, vanilla, and melted Chokopam.

In another bowl, whisk together oat flour, baking powder, cacao powder (if using), and salt.

Pour the wet ingredients into the dry, mixing until just combined. Let the batter sit for 5 minutes—it'll thicken slightly.

Heat a non-stick pan or griddle over medium heat and lightly grease it.

Pour 1/4 cup of batter per pancake. Cook for 2–3 minutes, or until bubbles form. Flip and cook for another 2 minutes.

Stack them high, top with shaved Chokopam, and if you're feeling extra, a dollop of coconut yogurt or almond butter.
